In the early days of civilization, cooking was only for survival. An Assyrian king held the first known cooking contest in 600 B.C. and several years later Archestratus, a Greek, wrote the first known cookbook, Hedypathia. Le Grand Saint Bernard Hospice, the first inn in recorded history was founded in Switzerland in 961 A.D., the first café in Constantinople in 1550 and the first restaurant was opened in 1765 in Paris. Since those early days, modern cooking has risen to the level of an art.
Marthe Distell founded the first cooking school, Le Cordon Bleu in Paris in 1895. Initially cooking was viewed as a hobby, but it has increasingly been viewed as a smart career move. There are many different types of cooking schools, including dedicated cooking schools and culinary institutes, traditional schools and colleges and recreational schools and programs, workshops, tours, and cooking class vacations.
Cooking careers are no longer limited to being a chef. Modern cooking schools trains students to become professionals in a wide range of related functions such as hospitality manager, research chef, food chemist, nutritionist, dietician, food stylist, food photographer, a professional food critic, food trainer or chef-instructor.
The syllabus in a cooking school encompasses the history of culinary traditions to get a classical perspective, foreign languages to understand words and phrases used in culinary arts and chemistry to understand the behavioral pattern of foods. Subjects such as food design to master the art of presentation, nutrition to understand the preservation of chemical building blocks, psychology to be able to deal with people, applied math to understand logistics and baking, pastry making and confectionery are also taught.
While choosing a cooking school, factors to be considered are the reputation of the institution, class sizes and job prospects via campus recruitment. One can decide between a certificate or a diploma program, two or four year degree program, resulting in a major or minor in culinary arts, food sciences, hospitality management, etc. A lot of young men and women enroll with a cooking school out of a desire to be creative and apply their zeal in a gourmet’s world.
